Improvement for logging bind parameters

Guillaume Smet has asked how the new protocol-level bind parameters in
the log file can be processed cleanly by scripts, especially if
double-quotes appear in the string.

I think the fix is to use single quotes for bind strings, rather than
double quotes, and to double literal single quotes in the string. Is
that OK for everyone?
